The buzz word of the day is upcycle.

“Upcycling is the practice of taking something that is disposable and transforming it into something of greater use and value.” – William McDonough and Michael Braungart in Cradle to Cradle: Remaking the Way We Make Things.

Because I never take time to come up with a clever way to display my holiday greeting cards, by the end of December I am ready to clear the jumbled mass of paper.  I’m sure I’ll do better next year.  Maybe displaying them like this.

But for now, I have to deal with the clutter.

Step 1:  Cut all the pictures out of photo cards, keeping the sides with names of senders in the separate pile with paper cards

Step 2: Sit with JumbleSon and replace all of last year’s photos in his “Friends and Family” cheap-o plastic photo sleeve album with new ones.  (Note to self:  make nicer, keep-sake album in near future)  Talk about each person and his/her relationship to us (who, what, where, etc.).  Repeat often.

Step 3:  Reread each card, letter, etc. and send New Year’s greeting to each person who sent card or photo (ok, so I haven’t exactly done this yet but I’ll get there before the end of January)

Step 4:  Discard photo card bits and prepare to upcycle paper cards

Step 5:  Execute upcycling plan

There are some excellent ideas of ways to get more life out of greeting cards over at Crafting a Green World.

This year however, we are opting to do a used greeting card drive in our condo complex.  Everything we collect in this envelope on our door (including our own cards) will go to St. Jude’s Ranch for Children and their recycled card program.

The 12 Days of Christmas were always a mystery to me until I read this excellent explanation by one of my favorite Seasonal authors, Waverly Fitzgerald.  I love the ancient idea of celebrating the 12 days between Solstice and New Years.

However, I recently learned that the modern 12 Days begins Christmas Night/Boxing Day (or  St. Stephan’s Day), and lasts through Twelfth Night/ Epiphany (or Little Christmas if you’re in Ireland ;-) .

This year, starting on Solstice Eve, we began giving JumbleSon one gift per day to open (two on Yule and two on Christmas).  This avoids the explosion of wrapping material, the overwhelmed child, ignored gifts, and perhaps just as importantly, gives me a chance to write thank you notes before everything gets intermingled and I forget who gave what.  Although I haven’t counted how many gifts have come in for him, I think we have enough to last us all the way to January 6th this year (not his parents doing, I assure you!).  So, this year we can follow both the old and new Days…

In the future I’d like to make an Advent calendar of sorts for the 12 Days.  Each day would involve opening an envelope or box or drawer that contains plans for a special activity or treat that day.  But this year since I’m still terribly disorganized, I’m afraid it’s mostly about gifts.

Happy 6th Day of Christmas or 1st Day, whichever strikes your fancy.

While the rest of the Northern Hemisphere celebrated the return of the Light, this year I decided to do what has always felt right this time of year – I honored the Dark.   It’s just never made sense to me to celebrate the rebirth of the Sun when it would be nearly Beltane (May 1st) before its warmth could really be felt (and, when I lived in Seattle, it was usually Summer Solstice or later before it was even seen – bless it!).

So all of the traditions just seem upside down to me.  Why not welcome the Light at the dawn of the Summer season when it’s actually bright?  Why not celebrate the darkness during the period of Winter that lasts from mid-December to early May (or whenever it ends in your geographic region)?  Why rejoice at what is to come when there is today?

A question I often ponder as one prone to living in the future.  Except when it comes to Winter Solstice.  Here I long to stay, especially after our beautiful weekend.  I’ve never felt so rejuvenated by a holiday.  Here are some scenes from our bitterly cold, joyous Yule…

Solstice Trifle 20 December 2008

There is a lovely recipe for Dragon’s Layer Cake in Yule:  A Celebration of Light and Warmth involving Ladyfingers, Liquor and Chocolate.  Right up my alley, and easily veganizable.

So, I started with Vegan Lunchbox’s Fluffy White Cupcakes, subbing orange extract for the 1/4 tsp of coconut extract.  The results were not great.

I’ve had this happen once or twice before…blame it on the altitude (which I never think to plan for).

As advertised, however, they were, indeed, “fluffy”.  Perhaps a bit too fluffy as they did not come out of the tin whole.  Yes, I should have let them cool in the pan longer.  But the recipe said “cool 5 minutes”, so I did and we got Crumble City.

No worries, mate!  Trifle is in our future!  Which suited JumbleSpouse just fine as it’s his favorite dessert anyway.

I put half the crumble in to my “trifle bowl” and half into an 8 x 8″ Pyrex dish.  I poured juice from 2 oranges mixed with 1/4 cup of Cointreau over each batch of crumble and let it soak in for several hours (or overnight if you can wait that long).

Since trifle traditionally has a layer of custard, I made a small batch from this recipe.  The color was a bit disconcerting (sort of a gray-ish yellow), but I tossed it on top of the cupcake in my trifle bowl anyway.

Today I took 3/4 cup of plain soy milk and heated it on medium-high heat.  Just before it started to bubble, I took it off the stove and stirred in ~9 oz. of Chocolove 70% chocolate until it all melted.

I poured/spread with a spatula half over the custard & cupcake layer in the trifle bowl, then added the slightly soggy, alcohol-laden cupcakes from the Pyrex dish.

On top of this went another layer of chocolate.  Then it was time for the cream!  Twinkie cream, that is (and yes, you betch’your Ho-Hos I’ll be scouring eBay for those Twinkie pans in the coming weeks)

I used 3/4 tsp of vanilla plus 1/4 tsp of orange extract instead of 1 straight tsp of vanilla.  Whoa!  This was some serious sugar!  Sadly, it was a bit thick for spreading easily on top of the trifle, but I didn’t fuss about the marbled chocolate/cream effect. (P.S.  I can’t wait until Santa arrives with tips for my pastry bag!)

On top of all this went some grated, dried orange peel (in honor of the Sun).

Filing this one under “orgasmic desserts” that are great for making if you have toddlers around that never let you cook for more than 15 minutes at a time.  Each layer can be done quickly, and the longer you wait to add a layer, the better it tastes.  So, even if it takes you three days to make the sucker, it’s all good!
